Set serverless function path with inline config

Is there a way I can make the following serverless function available at the /foo endpoint.

If I have the following file structure, and use the nitro netlify preset

└── netlify/
    └── functions/
        └── foo.js

I would like to setup my serverless function to be available at the /foo endpoint.

export default async (req, context) => {
  return Response.json({ msg: 'foo' })
}

export const config = {
  path: '/foo'
}

The reason this does not work is because of the generated _redirects file redirect

/*     /.netlify/functions/server     200

What is a good way to handle this? I know we can use the server/api folder, the thing is that I really like netlify's functions and I would like to keep using it.
