Is your feature request related to a problem? Please describe.
I think the environment.yml should have matplotlib in it.

Additional context
It looks like matplotlib is used in some of the example notebooks---it definitely is in the one I recently put together. So, it would make getting a workflow faster than having users manually add it to the catalogbuilder environment.

Hi @tmerlis. Since the catalog builder does not need it, I thought it doesn't fit in here. But, until we have a dedicated example notebooks repository, your suggestion makes complete sense.

Feel free to fork the repo and submit a PR with the suggest change and we will merge it in.

@tmerlis Just checking to see if adding matplotlib to the env is still useful and can be done through a PR.
